I would definitely recommend D5100 if you are a beginner. It is A LOT cheaper, smaller to carry, easy to use functions, and many fun in-camera creative functions such HDR. For the difference in price, you could buy a good 1 to 1 macro lenses for great macro shot. D5100 is so light compared to mid-sized DSLR, perfect for traveling!

Well this doesnt have anything to do with the camera, for example you can get good portraits with any camera and I think it is more lens dependent issue than camera dependent issue (have you ever heard portrait lens? :D). but if you are willing to pay for D300s I recommend D7000 which provides you with better performance than both D300s and D5100 with a moderate price tag.
