picture quality and transition from beginner to seasoned photographer

I love taking pictures and think I have some talent.  I want to develop it more with a DSLR.  I want to be in control of the photos I take.  I am worried the camera will have too much control.  I also want a powerful zoom,  does it sacrifice the picture quality if the lens is 18mm-300mm instead of buying two lenses?

    You'll be in control with either of these cameras. Go with the less expensive body to start with and worry about spending big bucks later if you're still into it.

    Your hunch is correct that image quality is not as good with a very long zoom lens. But take that with a grain of salt because if the image quality was so bad then nobody would buy the lens and the company would stop selling them.  If you're upgrading from a point and shoot then you will be very pleased with the improvement in image quality, regardless of what lens you use.

    Having said that, I do recommend you buy a telephoto zoom (for instance the EF-S 55-250mm f/4-5.6 IS) to augment the kit lens.

    I would take the Nikon D5100, because of it's good low light performance and amazing image quality. The nikon 18-200 is an awesome zoom, but you can also get a Tamron one that is a lot cheaper, and you will never need anything above 200mm exept if you do bird photography.
