I own a D7000 for the past 2 years and can vouch for this piece of gem. Good noise control, great picture quality (though you cannot expect the same as a full frame professional).
I do a lot of Landscape, Architecture and Portraits (Family Events, etc). I am also a lot into HDR photography and this camera has suited me very well. A lot depends on the lenses and the way you shoot. If the basics are right you'll be getting good images ....
So definitely a D7000 if you have the budget. Pentax ... as u rightly mentioned servicing will be a big problem. So Nikon it should be! :-)
Would you be open for second hand too? It'll be much cheaper. I am going professional and wanted to sell mine, along with lenses (or not). Upgrading my complete aresenal to full frame. I am located in Bangalore so lemme know if you'll be interested ... ill send the details.
